If you ever run out of brown sugar, you can make your own.
    1 Tablespoon molasses
    1 cup white sugar
    For light

    2 Tablespoons molasses
    1 cup white sugar
    For dark

    Mix until well blended.

Might have to fall back on that. We use brown sugar just often enough that it goes hard between recipes.

White sugar has been processed and the molasses removed.. so it's sort of a backwards step

    put it in the microwave

Powdered sugar can be made by putting white sugar in a food processor or spice/coffee grinder

How did I just never know this. That's fantastic, we never need a whole bag for anything.

Brown sugar - we don't use it much, once it's "dried out" I use it as a dry rub

Speaking of "making your own", I looked up making soy sauce the other day out of curiosity. Holy crap. It's like a 6 month thing for the real deal. Shenanigans.

I do make my own yogurt - you start with 1 yogurt, boil milk, let it cool to (I THINK, it's been a while) 100°F (A laser thermometer works for this), skim the top, mix in yogurt, low heat for 24 hours (I do in instant pot, crock pot works too). For this to work your starter yogurt DOES need to have the live cultures. Full fat chobani greek yogurt works. Then after that when you have a little bit left, dump in whole milk and start again. I haven't done it, but have read you can do it with frozen blocks too.

Cool to be looking for vegan recipes with a vegan wife, since apparently eggs are getting $$$$.

I thought vegans didn’t eat eggs and/or dairy?

They don't - that's why I like that I've been digging into the vegan stuff lately since eggs are going up. King Arthur has an okay vegan cookie recipe with just oils. It works, is as much as I can say really. They come out okay, good for cookie dough I guess. My sourdough vegan choc chip cookies using country crock vegan butter w/ avocado oil - some of the best cookies I've ever had

Some vegans don't eat honey, either. I guess that one is a debate among the vegan community.
