Tofu, sweet onions and bell peppers caramelized in sesame oil, spices (green curry paste, garlic, ginger, etc), broccoli, cauliflower rice and coconut milk added after.

Homemade copycat Arby's Beef and Cheddar with Curly Fries

 

Smoked fajita pulled pork nachos with homemade chipotle cheese sauce

 

Fried jalapeño and onion quesadillas with the leftover chipotle nacho cheese

 

Had a fat California burrito - if you know you know. Now I’m paying for it at a place where I use my phone the most.

 

I guess working from home does have its advantages:

Homemade fajita chicken nacho's, with Mango Habanero salsa. Seriously, find this brand/style, you will love it. Just the right amount of sweet and spicy.

 

Fresh off the griddle!

My dad got me a Cuisinart Griddler Deluxe for Christmas and it’s been my best friend since I’m currently cutting weight. Super easy to use, to clean, and track calories with since I pretty much eat the same thing every morning. Plus once it’s done cooking the individual foods, I just fold it back into a press to make the breakfast taco/burrito.

Some waffle breakfast sandwiches. Ignore the fry and tater tot mix that for some reason exploded in the air fryer.

 

I ran some shredded hash browns through my air fryer before tossing them in with corned beef and onions for scrambled eggs.
