    When it comes to biscuits, muffins, and these sort of non-yeast doughs...you want to minimize the amount of mixing.

    You'll know when you overmixed if your dough is smooth.

    When baked, you'll have a rough texture and your product won't be as moist.

    I am so sorry for your losses -

    Thanks for posting this - I am gonna have to give it a try soon; gonna have to get some buttermilk!
    For the kneading part, was it kneading or folding b/c folding with the plastic wrap kinda makes sense but kneading is a bit confusing.

    Ah ha - okay, that I do get!

    Also - that pound cake.. mmm...mm...mmm .. looks sooo good.

    I do that too!

    I take Cuban bread to my neighbor so I don't eat it all and I trade buns to my other neighbor for some of his venison.

    Anyway in case someone wants to make some (highly recommend)

    390g all purpose flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    340g butter, unsalted (room temp, I softened mine)
    226g cream cheese (room temp)
    600g sugar
    6 eggs
    1 tbsp vanilla extract
    zest of lemon or orange (optional, I did lemon)

    Preheat to 350 conventional, 325 convection

    Sift and mix dry

    Cream your butter, sugar, and cream cheese

    Important to make sure it's smooth, no lumps

    Add egg into your wet, little at a time, then add vanilla

    Add dry until incorporated, do not overmix

    10" round pan with parchment, or you can spread it across a 9" round pan with parchment and loaf pan with parchment

    Bake for an hour to an hour and 15mins

    When removing from oven, let it sit on your pan for about 5-7 minutes

    but pizza dough is bread too!

    Thursday = Ras/al/hanout mushroom + goat cheese calzones
    Friday = Tolouse/goat cheese pizza + Bacon/Pineapple pizza

    Yea I am not even gonna debate the pineapple thing - some like it, some hate it . . . it is what it is.
    During the summer, when I have fresh peaches, I use them instead - probably some blasphemy to you but the sweet/sour goes really well with the salty/smoky bacon..

    The goat cheese/mushroom calzone - came out great; has been a work in progress and slathering it with EVOO/salt and then dunking it in good EVOO as I ate it was super tasty.. I got the idea from some TV show - cook mushrooms with some onion, garlic and ras/al/hanout [Moroccan seasoning] and put in the calzone with goat cheese - it is almost perfect, next time - more goat cheese and I think I will have it 100%

    Questions:
    Did this make 2 loaf pans of pound cake or one?
    I ask b/c in your photo it looks like there is one round one and one loaf one -

    I have a convection oven but rarely use the function; I stick with the conventional and rotate things 1/2 thru baking - which did you use?

    You'll have enough for two of your choosing; the round was a 9" x 2" and the loaf was some medium sized pan.
