I debated with myself whether to post this...please take it in the spirit intended.
It will save you some grief.

Wood will expand and contract across the grain.
    Lengthwise, movement is insignificant.

    You see the problem.
Unless you can absolutely stop cross grain expansion/contraction, the glue joint is gonna eventually break or the cross grain wood will develop a crack.
In the long term, to prevent it is almost impossible.

This is precisely why floating panel joinery is used for fancy armoire doors, etc.
The raised panel is tenoned into corresponding grooves in the stiles and rails.
The join is mechanical, not glued, allowing some slight movement.

For a cutting board it would be more appropriate to either dovetail or tenon the crossgrain and long grain wood together.
Then pin in place with a single very small dowel in the middle.
The mechanical join will of course have to be a very tight fit for a cutting board.
So tight you need a rubber mallet (I have two) to whang them together.

I gave up trying to find an image showing the join in detail for putting an end cap on a cutting board.
If the boards pictured below were done properly, they will hold up indefinitely.
If simply glued together, they will come apart.
    Not right away, but eventually.

The principle is the same either way, for door joinery or any other case when fitting together long grain and cross grain.
    I'm not making this up.

I'm not offended if you're worried about that. I'm glad you brought it up cause I completely forgot about that when I was looking at the design. I can take the ends off again and try mechanically attaching them.:fistbump:

If you're not worried about it holding indefinitely, you could just seal the heck out of it :notsure:
It might last for quite some time if kept in a house where the humidity stays fairly constant.

You may recall me posting this before.
I made it maybe 6-7 years ago.

Why have these glue lines not failed?
Obviously there are numerous places where long grain and cross grain are glued together.

    1) The length of the glue join. Short ones you can get away with.

    If...

    2) The entire piece is very well sealed. In this example, multiple coats of polyurethane.
Oil finishes will have to be refreshed regularly.

I want them to last. :)

Question: Is polyurethane safe to use on cutting boards?

    Ugh.

Personally, I think there are more important things to worry about.
But pretty much nobody is gonna lay his reputation on the line and say yes.

Now, if the piece is not intended for use as a cutting board (contact with food)...
    ... anything goes.
Call it a centerpiece for the dinner table to put warm casserole dishes on.
That's what Mrs Gritto uses hers for. :notsure:
