It was once known as being "Culturally Deprived"

 

ALBONDIGAS. Mexican meatball soup. Golf ball sized meatball soup. 1lb. ground pork, 1lb. ground beef, diced onions, diced cilantro, diced garlic, Rotel from a can-1/2 can (drain the juice), handful of rice. Mix all together and form small golf ball sized meatballs. Bring water in a deep pot to hot, maybe add a little beef stock. Add in the meatballs individually. Simmer, Simmer, Simmer...add to the pot: Veggies of your choice, diced potatoes, green beans, small corn on the cob, sliced zucchini. Let it all Simmer 2-3 hours. DO NOT BOIL!

Ladle it out into a bowl, add a little Salsa on top.....Dinner Time!!!

I don't eat the tripe. I like my Menudo with yellow hominy. I generally get my Menudo from a can. "Mas Picoso", I renamed it "Mas Mocoso" because of the consistency of the tripe.
That shit will straighten you right up in the morning from too much alcohol the night before or a particularly ugly date you brought home.

 

I used to work with a guy whose wife was from Mexico. She would make the real deal with tripe. I can’t say that I didn’t like the taste of the tripe as much as I didn’t like the texture. It would probably be real good with hominy.

Chris Stapleton and Dewight Yoakam are both great singers. You don’t hear much out of Dewight anymore but he learned a lot from Porter Wagner his mentor. Chris Stapleton is great at any song he sings, plus he has a steel guitar in his band. You don’t see that hardly ever anymore. I always loved a steel guitar.
