    Just use my hands for shaping.

    But scraping, I use a plastic one. The metal one I use for cutting my butter.

    Plastic one (since the edges are rounded) are perfect for scraping a bowl clean too; have to make sure you don't let that stuff go to waste!

    I too use my hands to shape the dough -

    I use a metal scraper to cut dough into pieces and I use a big fat spatula to clean out the bowl

    I made more cuban bread yesterday and redux the temperature of the water to proof the yeast - used to use 110F, this time I heated it to 95F per your suggestion - seemed to work/be more active after the 10 min proofing time. THX
