Haven't tried that either - sounds like a good place to start, especially since you can freeze it.

I guess it is time to level up my baking a bit.

Yup. Big pictures, but they have bread and AP flour.

My local store (on the website) is saying:

    Walmart bread flour 5lb 3.86$
    Walmart AP flour 5lb 2.24$
    Target AP Unbleached 5lb 2.39$
KA AP 5lb 5.24$ (for reference)

I think the walmart ones can come in larger bags too, the target at least for me I only see the 5lb bags.

And now that we're talking flour I think I actually need to restock, I think I'm low for making some focaccia this weekend :|

o_O interesting. I might have to try that. Needs about as much "warning" as using a sourdough starter, but way less hassle. But my starter is almost a year old!

Good lord - what's the scale here? How much do you have? When I feed mine it's 50g each starter/flour/water and then if I'm going to need a lot more I feed it strong.

Also I keep discards in a jar with some 1:1 mix flour water for a couple days sometimes if I'm going to need a bunch.

I just discard a large portion; no real science to it...just watch it every other day.

I feed it with 1 1/2 cups of AP flour and 1 cup of cold water about once a week or a little longer.

Make sure to sift the flour so you can mix well and thoroughly.

Then leave it out for 4-5 hours to ferment at room temp before tossing it back in the fridge fully covered.

Gonna have to look out for the Walmart bread flour - my Walmart has a bait selection of flour that has been poorly stocked for at least a year now..

The KA bread flour is 5.25 - it used to be 4.25, which was tolerable but has crept up in the past year. Sometimes I think about getting the 25# bag of bread flour at Costco bc it is comparable to the Walmart price.

I should do some price comparisons before I need more.

For me 50% of it is the costs - I can make a loaf pan of sandwich bread for cheaper than buying it. And/or -I just enjoy making bread. KA vs. Walmart I taste no difference in the breads, so why spend for the KA?

Don't get me wrong, KA is great - employee owned, their store in VT is really cool, etc - but they grow their flour in the same fields as walmart :notsure: more than 2x the cost just isn't there for me. I stop at their store whenever I pass through.

It's plenty cheap anyway, and keeps my starter happy.

Can smell the beautiful aroma the second it comes out the fridge and I pop off the lid.

I really only care about the end product and if I can't taste the difference, why am I paying the difference?
Especially these days when groceries have gotten all kinds of crazy expensive -

    Fuck I'm exhausted.

40 in the tupperware, 20 in the oven, a handful on a cooling rack, dough for another 20 proofing in the stainless steel bowl, and dough for another 20 in the mixer.

I don't like walmart in general and every time I have bought walmart brand food items they have been noticeably sub/par.
That being said, I am willing to try the bread flour as a test; who knows maybe it works out -

Also . . Walmart is the 'closest' store to my house @ 12 miles away - so the lack of options often forces my hand and I wind up there.

No measure sourdough boule. 48 hour cold ferment. I just took it out of the oven.
