    Flaky dough is definitely better in my opinion.

    1 tsp Salt
    85 gr Ice cold water
    285 gr Patry flour
    200 gr Shortening

    Same steps as mealy except you do not cut the shortening into as small of a size

    Need to be careful in keeping it cool, especially when you finally use said pie crust as the shortening could 'melt' and you lose your flakiness

    Keep in mind, you'll have some 'scrap' dough left over once you cut the excess off your pie crust pan

    This remainder, since it will require kneading, will then become mealy dough since it'll be much more mixed

    As for the chiffon, you can definitely taste the apricot but only if you look for it.

    It's sort of lost, or really blended in with the meringue so it prevents it from being 'overly' sweet. But to me, it isn't sweet enough because of that.

    I loved the cream I made for both, but with all the pies I have at home still I gave one away.

    I love chocolate but pie form has always been disappointing to me - - so I avoid it
    Maybe if the filling were chocolate mousse instead of chocolate pudding. . .
    I am not a fan of chocolate pudding but I make a killer orange chocolate mousse

    Chocolate one looks too much like a chocolate pie. How is your ganache?

    No fruit tarts? My wife does a lovely fruit tart. From raspberries to apples to kiwi's and back

    I'm in school for 10 months, no rush we'll do fruit tarts soo. :rofl:

    Nothing under the pistachios, it's all mixed in together.

    I absolutely love the chocolate tart because the chips aren't milk chocolate or very sweet at all.

    Added a small bit of sugar actually while making/cooking it to get some sweetness.

    I had to go to my neighbor's house to give him 4 slices otherwise I was about halfway done with it myself :anonymous:

    Just left his house; was there for like 3hrs lol but yeah he freaking loved it.

    Him and his family have received a ton of rolls, baguettes, bread (ton of loaves), macarons, and more!

    Even made rolls here at home just to eat a few and give his family the rest.

    I used to have a good food exchange with my neighbor but then his wife started getting all :annoyed:
    Now I mostly just speak when spoken to, cause I'm not trying to cause him any grief but I do miss those days - -
