I'm planning to replace leaf springs on my 2021 Off-road. Currently I have bed removed for some other reason. Any difference if I replace leafs with bed on or off? (Other than having better visibility/access when bed is off).

No difference. It all goes downwards.

You can install without bed on, but torquing would probably be best once bed is on and truck is on its tires.

Or just have two fat friends stand on the frame and torque to specs, the bed doesn’t way that much.
