    Nope just a late dinner. Spinach pasta made last night but cooked today. Chimchurri steak. Kinda a "let's clear out the fridge" situation but it worked.

    Also I got some of these and hooooo boy. I don't have a sweet tooth but good lord. These are good.

    The Costco lamb chops were heat off at 135°F, extremely tender and pink juicy. Taste was good, not as muttony as their lamb roast.

    Herb coating was middle east and med spices mixed. Cooked in coconut fat to start, then went olive oil and butter.

    @Pablo8 do you have a dog? Apparently the scent of lamb cooking can scare some dogs. I don't know that I've ever even made it with my dog but my sister's dog was shaking scared when they cooked it.

    Lamb has two scent glands in the upper thigh that need to be removed when butchering before breaking the animal down into primal cuts or the meat will have a very strong odor and taste. Not all butchers or meat cutters know this.

    I think the lower cost aus/NZ butchers don't know this for sure - BUT - isn't the age of the animal and food source involved as well?

    I love clean lamb. Local if you can find it. Extremely tasty. We used to buy whole lambs for the chest freezer. I'm going to try to do this year.

    USA lamb is vastly superior. In fact it's even mentioned in the Culinary Artistry book if memory serves.

    This is too much biology/science for 8 AM for me.

    Sisters dog is a Britney Spaniel - however, he's super lame. Mostly cat. He goes about a mile for walks then wants to go home. Super low energy dog, especially for a Britney. We grew up with a husky, so when someone says a breed is "high energy" it's like....really? so she was expecting some energy. Sleeps all day. I have a catahoula, at least she's got energy. I haven't made lamb near her, but now I am tempted.

    Guess I might have to give it a go sometime soon. My food schedule is all jacked up this week, should be making tacos tonight though :drool:

    Father in law raised lamb, our mutt was a herder that more than once culled a lamb out of the herd and chased it into the river for easier attack. Was a bit of work to teach the mutt to leave the sheep alone.

    When we did butchery at culinary school a new chef instructor was doing the lamb demonstration and noted the scent glands when removing them. All the other instructors looked at each other puzzled because it was news to them.
