    A dry aged brisket. 21 days is the shortest I’ll age something and it happens to be when some friends will be staying with us. I’ve also got a half rib roast going for the full 45 days

    We will see how they all turn out. I’ve rented fridge space in a commercial kitchen to dry age “the right way”, this is the first time I’m trying bags at home.

    Been thinking about pork country ribs since laOdOg posted Ancho ribs.
    Trying a new to me rub (Berbere). East Indian flavoning. Hot smoked @300 +- with cherry. Sauced around hour 2 and again every 30 minutes or so with Jack Daniels bottle sauce. Toothpick tender after 3 1/2 hours. Served with a box garlic pasta.
