    I love Korean, but this gives me more of a Vietnamese vibe. Probably the French application. I love a good hotpot where I feel like I’m fishing in muddy waters and unsure if I’m about to pull out some beef, or an old shoe. Damnit, now I want Korean… or some Vietnamese house special hot soup.

    No pics… last night was sloppy joes, lunch was garlic buttered boiled shrimp, and dinner was chicken and mushroom stir fry. Today was visit to Chinese market, so I’ve got some fresh sprouts, mushrooms, bamboo shoots, etc to make some different things. If I had more time, I’d make some day kimchee. The Napa were small and tall… perfect for it.

    Asian market, so not always sure, but traditional button, oyster, king oyster, shiitake, enoki. They had probably a dozen varieties- wood ear, a bunch of variants on enoki (larger, smaller) as well as two others I have ZERO knowledge about for either name or use. One of them looks like a forearm with a relatively small brown head. The other looks like a larger version of a dark portobello, but more domed than flat. I should take pictures apparently… there is a very large presence of Vietnamese here in Louisiana with a smattering of Chinese (most from Taiwan) and a touch of Korean and later Thai and Laotian arrivals. As such, there are small markets catering to local nationals. But in the New Orleans area there are two larger markets - Hong Kong (which is Vietnamese owned, but Asian centric) and Golden City which is Chinese owned and Chinese Centric. I was at Golden City. There is also a commercial distributor for Indian, which has Indian, British with some Spanish and Asian. Excellent place for ANYTHING Indian from pots to thumbs-up.

    Sounds like you have quite the variety! I have little exposure to mushrooms outside of various chain grocery stores, so I’m always curious

    You know what, I've made fun of it but I'm going to have to try it. I can't give foods a hard time without trying them, that's my rule. I hate pineapple on pizza, and I've had it.

    It's from "a while ago", back when commodities were harder to come by, so they don't do cheese on this or anything. Seems very British-esque if you ask me :rofl: I'll be giving this a whack this week, probably later in the week since I just did a Sunday gravy this week and I'll be chowing down on that, giving me acid reflux for the next 2-3 days.
