Funny I was sipping on rare breed barrel proof rye last night. So fucking good.

A few new pours and really enjoyed both.

The Peerless is great! The Oak stands out, but isn’t over oaked, at least in my opinion. Really like this one. And the Smoke Wagon - another excellent pick up that has been suggested on the board by many. Two excellent pickups to enjoy on this Saturday. The SW bottle is really cool as well!

And then a question for those on the board - open bottles? Do you all try to limit the number of open bottles or do you just open and pour when you feel like that particular bottle? I rotate through these bottles, so they are going to last a bit but I like the variety, although perhaps i have too much of a variety going right now, with every bottle I have being open minus a few back ups and the KC18 I have.

Just curious - seems as the juice isn’t overly effected by being open for the amount of time it would take to drink in time. But thought I’d ask.

    Thanks!

I had the same concern. The general consensus I got back when I asked the question was it doesn't make much difference as long as you are storing properly. One thing I've heard many times is that once you're below 50% the oxidation accelerates. So if I feel like I'm going to finish the bottle in less than 6 months after it gets below 50, I leave it alone. If I think it'll be longer I have a few 350ml bottles to transfer into.

Right now I have about 25 bottles open and am waiting to finish one before I open another.

Whiskey don't oxidize. Is a widespread myth. Here is an article from a PhD chemist explaining why:

    https://distilledsunshine.wordpress...key-doesnt-oxidize-after-you-open-the-bottle/

What happens as you drink a bottle of whiskey is that empty space in the bottle above the liquid - headspace - increases. Ethanol, being volatile, evaporates out of the remaining whiskey solution and remains in vapor form in the headspace, escaping the next time you open the bottle. This causes the whiskey to proof down ever so slightly every time it happens.

As you near the bottom of the bottle, the ratio of headspace to whiskey has increased dramatically compared to a full, newly opened bottle. Thus, the last couple pours are meaningfully lower proof than the ABV stated on the bottle label. This is why they are so often so "mellow".

The "solution" I use is as you described - I use halfies (375mL bottles) and decant 750s into them once they reach half full. This "resets" headspace more or less and reduces de-proofing.

The ethanol vapor can't escape if you open the bottle cork-side down!

I finally got around to cracking this bottle. I gotta say, this was one tasty pour! A little sweet, a little hot, a lot of flavor, and a nice lingering finish. I'll definitely have to go buy another bottle or two before Costco runs out!

Rocks glass works just fine. More of a preference thing. You get a little more concentrated nose from a Glencairn, and they're great to have around for tastings.

I just picked up one of the Aged & Ore neat glasses. Man is it nice.

Yeah I got the Aged and Ore Traveler myself. A new glass to enhance the experience and an easy way to bring something tasty on a camping trip.

i just bought my first ice mold 2 weeks ago

i used to drink out of plastic sports label cups...
the fancy gold trimmed waterfowl glasses that i've been posing with lately were passed down to me by my FIL. They were his dads. i love them. i never met the man, but i like to think we'd enjoy some whiskey together in those glasses
