    I might give that a whack. Looks good, and pretty simple too.

    Next time you want to use ground chicken, if you have a food processor what I do is 1 breast:1 thigh (both boneless skinless, or skinned & deboned if you do a whole bird), slap it in a food processor, blend until the right consistency (don't overblend, want it kinda chunky). Meat smoothie, but I have a lot more confidence in the quality of what I got. Plus, it's usually cheaper.

    Whenever I see reduced for quick sale/discounted cuts of beef, as long as it's not $$$ to start with, I just grab it, shred it, throw it in the freezer. I've made chicken burgers this way too, and they're pretty good. Breaded and fried came out really good too.

    Mmmm… the Ethiopian place in DC (NE? Still there?). There was also a really good one on the outskirts of Houston and a nice one in New Orleans. I could die a happy man on honey wine and lamb tibs.

    Nom! In middle eastern I drink Lebanese tea. There’s a place in New Orleans called Lebanon Cafe that has awesome lula…. They also have a very unique to them dish they call bathenjan that is roasted eggplant, bellpepper, onion, garlic, tomato, jalapeño, olive oil… it’s like a chunky warm roasted Lebanese salsa you eat with pita.

    In DC? I know of 2 Ethiopian places, and a third that we didn't go to but I know it exists and had good reviews.

    This place was real good, just me and the wife went here.

    We got a couple sambusas. Ask about the size before you think "I'm a big guy, I'll get 2 of those for an appetizer"

    The other one is Keren in Adams Morgan, that one we went to a while back like 2016 timeframe. It was good, I just don't remember specifics.

    Edit: DC has like 2 dozen ethiopian places. DC has a lot of people who go there to advocate for their countries for support, so it's a melting pot of SO. MANY. CULTURES. So much good food from all over the world there.

    I guess I should have stated, this was in the late 80s. :anonymous: It was the only one then. Highly likely it’s gone, but I have been surprised about other places that are still around. :notsure:

    I haven’t done “shake n bake” in eons… thanks for reminding me… it’s a simple change that will make things different. My favorite is pork center loin.
