My knife block has 4 knives. 2 chefs knives, 1 bread knife, and a paring knife. I've never had the desire for a bunch of specific knives and whatnot - maybe need to add a filet knife, but, otherwise I'm happy with our current selection of cutlery. Does the trick. I need to be better about sharpening/honing them.

Dimples aren't necessary for a Nakiri style knife, as it acts more like a chopper than a slicer. There are companies that make them in both styles, but almost exclusively when you get to the higher end knives, they are dimple free.

Now, on a Santoku, like what you linked above, dimples are the way to go.
