Me too. Beef ribs, while delicious, are lacking in meat.

Thoughts?

 

Y'all ain't wrong. When I make short ribs I'm always surprised at how much the meat shrinks. I think it's because it's so fatty, which is also what makes it so delicious.

 

You need to look for beef plate ribs. I used to get them at Costco business centers. Haven’t seen any locally. You can source online but prices are high. Cryovacked in 3 or 4 bone packs.

 

First smoke of the year

5 spicy sausage 5 beer bratwurst and 2 pork loin in garlic and black pepper from the store.

Didn't plan on it so didn't have much choice at the store when I decided 30 minutes ago to run the smoker today also got a bottom round i was going to do as well but I overestimated the space i had. So that'll be a crock pot cook i think.

 

Just cook more

 

Any butchers local to you? I've never seen plate ribs in store but my butcher always has some.

Sometimes grocery store butchers can get you cuts you'd never see otherwise.

No comps in a while. Crawfish season now, so been boiling my ass off. Done 4 so far with a few more planned.

Did a fun cook tonight, though:
















One ostrich, one elk. Both with Anaheim peppers stuffed with cream cheese, habanero jack, and adobo sauce. SPOG in the meat. Snug bacon blanket and smoked over mesquite at about 275*.

Both were great, but the elk was next level.

First smoke of the year and I'm doing a little experiment.



The two pork chops in the front had the rub on overnight. The two in the back had the rub put on just before going on the smoker. We'll see which one the kid likes more.

 

No foil for drippings...brave!

 

I’m guessing your kiddo will prefer the overnight dry brined chops, especially if the rub had a higher salt content. Perhaps. you never know with kids though! Probably like all of it!!!
