    My “beer” battered fish as best I can remember

    • 1 cup all purpose gluten free flour
    • 1 tsp. baking powder
    • 1 tsp. corn starch
    • 1 tbsp. each garlic powder, onion powder, ground white pepper
    • 2 tbsp. paprika
    • 1 tsp. cayenne
    • 12 oz. ginger beer (or gluten free beer, but I prefer the sliiiiight sweetness)
    • Salt and fresh ground black pepper
    - Slice fish into 1/2 or 3/4 inch wide strips. The batter will double in size when frying. Lightly salt the fish and place in refrigerator
    - Mix dry ingredients throughly (no salt in the batter). Add the ginger beer and stir gently. Let the carbonation and baking powder dance
    - Remove fish from refrigerator (~20 minutes) and pat dry. Dip them in the batter and fry at 325 for 2 minutes. Remove, cool for a few minutes, and fry again for 1 minute at 375.
    - Salt them as soon as you pull them out

    Tortiller, toppings, and sauce ‘em!

    Hot honey, sriracha, and lime sauce:

    • Hot honey
    • Sriracha powder (or sauce, just be cautious of it getting too runny)
    • Mayonnaise
    • Sour cream
    • Lime juice
    • Salt
    • Garlic powder
    • Worcestershire
    1:1 mayo and sour cream, the rest is dependent on your taste

    Ate it too fast, but pamela’s are easily the best GF graham cracker, at least of those that are easily available. They break really easily and half were snapped when we opened it, but boy are they good.

    found 'em yesterday and had to grab a box. they had the other kind too but i prefer waffle cones so i just got these.

    not too bad! they could be just a tad crunchier but they are sealed at the bottom so i didn't get that weird drip thing happening that some cones do
    they were even on sale! $4 something for a box of 12
