    Very much this. The ONLY exception to burger temp is if I grind the meat myself. Otherwise I can't guarantee the food safety. If I do grind it myself, I am comfortable getting closer to medium.

    I wish the picture did it justice... vegetarian "torta" sandwich. Mushroom and poblano filling with pureed black bean salsa and chipotle aioli. Topped with lettuce, fresh jalapenos, and a tomato salsa

    Edit: Planned on using Oaxaca cheese but it was unavailable so ended up with quesadilla. It was a little heavier but still melted very well
