    I only sliced into my chocolate ganache and thinking I should make a fruit tart.

    Need to go out and buy a bunch of berries but, it's hot out so one of these days.

    Sounds delicious! I’ve been thinking of a fruit tart a lot lately. Saw a nice one with candied flowers too. Wouldn’t turn down a good custard either. Daughter is the pastry chef. I’d shared in another thread…

    entremete - it’s a white chocolate cream cheese ganache with peach filling and a graham cookie on the bottom. “peach cheesecake” inspired.

    Pro tip: flip those "buns" over so the glaze melts into the other ingredients. At least that's what I do with american cheese cheeseburgers. You know, when I need to get my cholesterol levels back up.

    Sirloins pan seared done… (medium)



    Beans done with olive oil, garlic, dried red pepper, kosher salt…



    Done medium all through… (145 deg)



    Korean BBQ short ribs…

    Looks closer to med well/well done. You want to pull it a little before the temp you want as it still cooks a bit during resting

    155 is medium. I was at 145 for that reason. I prefer med rare, but I settled on medium to keep my ‘others’ from ruining it.

    155 is med well for me imo. I stick to like 140 to 145 for med with med rare being 130 to 135. I prefer rare to med rare when i have steak
