I spent the entire pandemic honoring taco tuesday and perfecting my spices and tacos. I present the perfect taco-

Tried my hand at the braised pork loin.
dusted with Montreal seasoning and Italian seasoning. Half a lemon before pan searing. Finished with butter.

I wanted to share this teachable moment…

Wife made sketti tonight. Felt it needed vegetables. Only found StirFry Mix in freezer and decided to pick out “compatible” veggies. Got in a ways and said F*** It… and dumped the bag in.

Sweet and Sour Chicken

 

What do you use for your sweet? My mother liked apricot preserves. I’m partial to plums, but move around with whatever is available in the pantry or fridge.

I made stirfry…

 

We also had sweet a sour chicken. Ours is reduced carb though. We use coconut aminos instead of soy and swerve brown sugar substitute. Pineapple juice, ketchup and brown sugar with rice wine vinegar and coconut aminos. Thickened with xanthum gum. I like to add a touch of minced ginger to mine. It was delicious.

 

Isn’t Swerve awesome? They’re local to me. I’ve used a number of their “kit” baking products and turned my brother on to them (he’s running a diet more similar to you). I’ll have to try pineapple one time… it sounds delicious (I will use chunk in dishes, but hadn’t considered as my sweet).
