    Hell no!!

    We get in a 1-2 cows + 3-4 pigs/week along with 1-2 lamb/month

    Everything is done by hand [all the cutting/breaking cuts down/cleaning them] including grinding/making sausage/meatballs/burgers.
    We save all the trim and grind it; that trim is super high grade, picked thru by hand prior to grinding, ground fresh each day - I personally think that is one of the best things we 'make' along with the sausages.
    Our ground beef is usually comprised of meat from 2 cows at the most vs. god knows how many animals in an industrial setting [this fact grosses me out so much for some reason].

    It is a very labor intensive process to do it this way .... shit is expensive AF [employee discount for the win]
    But we rarely, if at all, have 'leftovers' and when we do we make meat sauce and such with them. Every bit of meat gets used some how.


    It is as small scale as can be.

    I had a cousin that had his own little processing place like that. Was the busiest during deer season

    We can't do deer - government and all!!

    But we have several staff that work at deer processors on the side + a good number of people that come in and just want our trim fat for their own processing at home.

    Make stock with em mostly - sell some for dogs/people to make stock with

    We also sell marrow bones - but usually only the femurs for that..

    Sometimes we make marrow butter = roasted marrow + butter + herbs which is so fucking good on some roasted potatoes; tastes all buttery and meaty rich all at once!

    Marrow is a big item. We would slice the bones about 1” thick, box and ship out.
    The rest of the bones are ground for bone meal
