    That looks really good. I love jerky. I got a dehydrator for Christmas last year (and I have a smoker) but have yet to make my own. Been wanting some good stuff lately.

    I used to use a dehydrator, makes a great product. One Sunday 5-6 years ago I was going to do some jerky after I started a couple racks of ribs on my smoker. I had all these racks and space and thought why not. Never plugged up the dehydrator again.

    I need more hours and more motivation to do all the crap I want to do lol. I do need to use the dehydrator though. Wife and Daughter bought me a nice one that's pretty big.

    I get it, there are some positives to using a dehydrator, there are zero hot spots. That doesn't mean that all your slices will finish at the exact same time, but way more forgiving. It takes way longer to finish as well. Start with an "eye of round" roast. It's one huge muscle with little to no fat, just easy to work with, and slice across the grain for tender bites.

    Recently I started using milanesa. It can be found in Mexican markets. It's top round cutlets already cut into 1/4" slices. Cut into you desired strips and ready to go

    This batch went for sale today and I’m already through 30 pounds of it. Second batch has another week to rest. Third batch will (weather permitting) get smoked on the 20th. That’ll be a hefty one, late planners throwing Christmas parties are good to me.

    I don’t raise prices or anything, but having top tier smoked cheese in close vicinity is a perfect opportunity. Preparing for peoples’ unpreparedness :)

    I mean, if a 3.5L V6 can't heat a shoebox to 225 deg, I'd be concerned :rofl:

    Yeah manual start up needed. I haven't done it, and probably don't plan to. I would absolutely bring it camping if I was at a campground with mains though.

    Full disclosure, I'm a fair weather smoker. So the fact that there's snow on the ground and I just tossed a butt in the smoker isn't exactly normal for me. :laugh:

    Loaded up the smoker to bring to my brother tomorrow and have new hinges welded onto the firebox/door.

    Warn drill winch made loading a piece of cake. Also made some supports to get the weight off the wheels, and spread the weight as much as possible. Pulled the tailgate off because I was worried about crushing it- this thing is heavy af.
