    I have tasking from the boss lady to fire off the computer-controlled cutting machine and make her some scrapbooking stuff. At least it sounds cool when I say computer-controlled cutting machine :D

    Trimmed them up, left some fat on. Maybe too much. Put some maple syrup on then my rub. Smoked for 1.5 hrs on 190 then put bbq sauce on and bumped it up to 225 for about 45 minutes. At that point they started to look like I was going to burn them so that's when I pulled them off

    Edit: they were open on the rack of my pellet smoker, never wrapped or anything

    You didn't cook them long enough. The sugar in that syrup is what was burning.

    Most people use a 3-2-1 method.. I've had good luck with a 2-2-1 myself.. but 3-2-1 is 3 hours then wrapped for 2 hours then unwrapped for the last hour. the sauce usually goes on the last 20 to 30 minutes depending on the sauce.

    Also, join the Smoking thread.. you can learn a lot about cooking the rest of that hog.
