    Evening. Just pulled an apple blueberry pie with a brown sugar, butter, and bourbon compote. Second time using this homespun recipe. It’s my new favorite apple pie.

    Absolutely. Just FYI I haven’t really measured anything so all measurements are approximate. I cook by taste and add as needed to balance the flavors. Next time I will measure it out and repost if needed.

    Place bottom crust into pie pan. I use glass
    Let top lay over edge of pan for now

    If using premade crust…cut second crust into 1” wide strips and set aside

    Start with 3 or 4 apples. These were Honey Crisp so pie was a little sweeter than the last time when I used Pacific Rose apples.

    Slice apples into quarters and remove core
    Slice each quarter into 5 thin slices. set aside

    In pan melt 1/2 stick of butter
    Add approximately 1 cup packed brown sugar (I used Swerve brown sugar substitute)
    Stir in 1/2-3/4 cup bourbon
    Bring to simmer

    Balance taste. (Each flavor should be present molasses sweet buttery bourbon)
    Add apple slices and stir until coated with liquid

    Cook until apples become slightly transparent (don’t overcook though) you want them to absorb the liquid but remain crisp.

    Using tongs remove apples and place into crust. Making sure that they form an even bottom layer. I align my apples lengthways pointing towards the center. It makes it easier to slice. Add 1-1 1/2 cups of fresh or frozen blueberries

    To the compote mixture
    Add 3 pats of butter
    Approximately 1/8 cup sugar (I use monk fruit erythritol)
    And another couple splashes of bourbon
    bring mixture to boil

    Slowly add cornstarch slurry (1tbls of cornstarch to a little cold water stir until mixed) stir until mixture thickens

    Remove from heat and pour over apples and berries

    make lattice crust and pinch edges

    Bake at 425 for 25 minutes reduce heat to 375 and bake for another 15-25 minutes or until golden brown

    Remove and let cool (unless you’re like me and can’t wait that long) the compote will still be liquid until it fully cools. But I like it this way..I just make sure I spoon some of the compote over my slice.

    I’m waking in Culpeper va this morning I have not gone outside yet but my phone is say 19* I hope it’s not going to be as windy as yesterday it was pretty cold with the wind added in. And the bay bridge in a tall wobbly van was fun.
