    12 lbs., 4 hours at 250, 122 rest for an hour while we drove to the in-laws’. Carryover rose to 128, 500° oven for 10 minutes.

    Forgot to post, but family treated me super well for Christmas. Got two meater +s, some bbq gloves, a grilling apron, and some replacement parts for the smoker including a thermometer (og one has water damage and is 50 degrees off at best), and replacement handles for the smoker lid, and firebox door (current ones are dry-rotted and barley hanging on).

    Anyone else turbo charge their chimney with some jet ignition? Just started doing this about a year ago when my neighbor complained of the smoke from me lighting my chimney...

    This is just from google but this is how I start my charcoal:

    Just a heads up, it gets charcoal dust eeeeeverywhere under it, mine's littered in it. I need to clean it, probably will this spring, but it gets nasty. not that big of a deal, just to make note though.

    Your neighbor complained about the smoke from starting the chimney....? wut?

    I do mine over the gravel like that because of the dust. Yes, my neighbor has his patio right on the other side of the fence. He spends a lot of time out there in his hot tub, lounging etc. The smoke just seems to linger from the normal starting methods (likely because these houses are so damn close together, creating a bit of a wind block). He's come over and knocked on the door multiple times and even complained to our landlord a handful of times. This method does create minimal smoke, but sends it vertical pretty quick and goes over his house.
