    Katz has a new GF item, soft pretzels. I bought them for my grandson who has Celiac. He says he always regretted not being able to get a soft pretzel at Auntie Anne's. I haven't tried them but he says they are tasty.

    First batch was experimental (trash) but the second batch turned out right fine. GF stuff cooks up weird :crazy:

    last time i made this bread it turned out awesome but it had a giant air bubble in the top so i thought i'd score it and hope that fixed things...then realized it looked like batman staring at me :laugh:
    ooohh...one of my favorite snacks is the GF snyder's pretzels and peanut butter. i'll keep an eye out for those too!
    and i've been on the hint for their GF pop tarts but so far no luck

    i feel like a mad scientist in a laboratory sometimes when i'm baking and having to do all the weird things we have to do with the special flours and stuff

    There was a brand of GF pop tarts he liked, but they discontinued it. I think it was Glutino. My grandson has had Katz's GF pop tarts but he says they are too sweet for his his taste.

    Not very hard to make gluten free. Just toss the flour tortillas to the side and sub in corn tortillas lol. Just thought I'd share! Great for camping, use a Dutch oven and prep beforehand.

    - Green Chile Chicken Enchiladas Casserole:

    One giant can of Green enchilada sauce.

    One Jar of 505 medium green chile salsa.

    Sharp cheddar & pepper jack cheese.

    Toasted corn tortillas (Chard for flavor). Pulled into pieces.

    Shredded boneless chicken thighs.
    1 cup of chicken broth, pepper, garlic powder & paprika.
    (I use an instapot and usually have some left over for tacos, quesadillas, soup etc.)

    Build, layer by layer and cook for 15-20 minutes at 350 till cooked through and top layer is crispy.

    Serve with avocado or sour cream.

    I didn't follow this exactly and due to being a bit overzealous with the biscuit topping it took AGES to cook but it came out good.

    It wasn't NEARLY cooked enough. After an additional 20 minutes then another 20 bumped up to 375.

    It went from being a soupy mess to cooked all the way through.

    looks good @Fargo Taco ! I have found that most GF stuff takes longer to cook... no idea why really.
    I have a couple of cookie recipes that were originally written for regular flour and I can make them GF, 1:1 on all ingredients, BUT they take 20% longer to cook :notsure:
