I used bone in Thighs a d boneless skinless chicken breasts in the chili.. took the thigh skin off prior and laid it out flat in the fridge to dry out a bit.

Lined a baking sheet with foil and preheated the oven to 400F and cooked them for 20 minutes.

So I tried something new with the crockpot.. I'm sure it's nothing new but it was new to me..

I made homemade chicken broth in the crock pot with the carcass of a rotisserie chicken and tossed in some ginger, parsley, onion, garlic, celery, carrots, a bay leaf, salt and whole peppercorns. I was using a smaller crockpot and added about 8 cups of water though I finished with 7 cups of broth.

I cooked it on high for 4 hours then pulled out all the big stuff and strained it then poured into some Mason jars for use later.

Ok, I'll admit it. I've never cooked country ribs before :anonymous: today that is changing! Layered in onions, coated the ribs with bbq sauce, sprinkled some spice rub, and in all the little piggies go. Now we wait!

Just started a batch of chicken crack but I'm doing it with bacon instead of bacon bits. It's probably been 1.5 years since I've made it. It's always salty goodness!

    here's a min crockpot'ed oxtail, beef stew-style.

Can of tomatos, carrots, celery, onion, garlic. bay leaf, some beef base, red wine, basalmic vinegar, soy sauce, salt and pepper. can throw in potatoes or eat with bread, noodles, or rice

I like to thicken with mochiko (rice flour) for a slightly sweeter gravy. but can use a corn starch slurry, too.
