my insurance paid to rebuild a car for me twice because of aftermarket panels. first time, they insisted on aftermarket parts, i let them do it at the behest of my body shop. after it was completed the first time, i noted extremely large panel gaps that i could stick my fingers in, and sub-par forming, where detail creases and mold lines were shallower than the oem panels they replaced.

they took it back and replaced everything with oem panels.

aftermarket generally carry larger panel gaps-- if factory is 1/8", 1/4-1/2" is acceptable for aftermarket, and fitting the body lines between aftermarket and oem panels mating up to it can take a magician of a body guy. it's possible, but not at all 'bolt-on and go'.
