I am planning my meals for the week, came in to see what y'all were making for inspiration. This was the first unread post. Sold! Probably not crawfish for me, but this made my life easy!

Recommend! I made a version of this before, didn't turn out that great, so I followed the recipe closer this time, and hot damn.... Still didn't follow it to a T, but a lot better. Had this over rice with a couple tortillas last night, planning to have it with some potatoes for leftovers.

Blizzard breakfast - bacon egg and cheese omelet on brioche with a third cup of coffee.

 

I did a smoked meatloaf. This was my second attempt at meatloaf. First one was in the oven in a pan and only hamburger. It failed. This one is beef and pork with a trinity of pre-cooked vegetables. Eggs, panko, ketchup, worcestershire and spices. Smoked for 2 1/2 hours. It was good but not great. I have some ideas on how to zazz it up a bit more next time.

 

Salisbury Steak

 

Bloody Mary mix is one of my go to ingredients for meatloaf. That and extra onions and a F ton of salt. Bacon chunks are a good addition too.

Fried up some tortilla bowls, browned up some deer burger and threw in seasoning till it tasted right, and made a bechamel cheddar cheese sauce with a few banana peppers (out of jalapenos)... That is store bought salsa and guac though... mini taco salads

 

One of the things I add that seems to really help is good shard cheddar cheese that I grate. Sometimes I will replace a good portion of the bread crumbs with crunched up Doritos also. Gives it a really nice flavor. I also add some milk into it to help it keep moist (old meatball trick from a Sicilian relative who made the best meatballs I've ever had), it works with the bread crumbs and really seems to help.

Nice job though, the best part of meatloaf to me if the sandwiches the following days. I have meat in the fridge right now to make one this week lol.

Not a big fan of mussels but that looks mighty good.
