    one of the ways I cook eggs. in Cantonese it is called "Swui-Dan". literally means "WATER-egg". I steam them, and they come out like soft tofu. very delicate and effen delicious.

    Corned beef..........What's your method? St. Paddys coming up. My usual is steamed stove top in a Dutch oven. Elevated so not to be laying in water/broth. Also done in smoker sometimes with pastrami seasoning.

    yea. if those people would all just drive Tacomas it would be easier.

    my eggs.

    1 cup of eggs. I break them into a measuring cup.
    2 cups of Dashi stock. hot. not boiling, hot.
    mix eggs, add stock, add salt, maybe some white pepper.

    I strain it thru a fine mesh sieve, into my cooking vessel.
    Cover vessel. if it is a bowl, cover with a plate or something.
    steam for 15 minutes.

    done.

    I'm extremely lazy about it.

    Toss it in the crock pot as the thing says and hit go. I have a couple to do Saturday for a family brunch Sunday. Making them into sliders. Will probably go out Monday and see if I can get some on discount to throw in the freezer.

    I've never done one from frozen, but I'm sure it can't be that bad.

    i have a spare in the freezer. it comes out fine.

    i cook mine in a braise. just water, to reduce the saltiness, and i cook it partially submerged in a dutch-oven pot in a 300 deg oven. that temp, in my oven is the most gentle simmer. this way, i can pull the meat out, put the pot back on the stovetop and cook my veg to the prefered doneness.

    Same, more or less… I boil with pickling spices (including the bag contents), remove when done and cube. I boil the cabbage and potatoes with the cubes until done. Serve with creole or yellow mustard (yea, kids).

    Interesting. I slice mine like a brisket.

    I'm making this weekends into a batch of sliders so I'll definitely be slicing like a brisket for that.
