Picked up a set of method 703 in 16x8 0 offset and was going to do a 5100 lift and larger tires but my truck is brand new and didn’t want to throw away new shocks and tires because of how nice and plush it feels too. So I’m interested if anyone has just swapped out the wheels and left stock tires.

There's nothing to stop you from doing that if you want. You could also sell the stock wheels/tires to recover some of the cost of the new wheels/tires. They tend to go for $800ish in most areas.

Go in the driveway and set the new wheels on something so they line up with the stock wheels. Back up 20 feet and see how it looks.

Got 16x8 0 offset SCS F5's and put the stock 265/70/16 tires on. Looked stupid but ride fine. Put 265/75/16 Falken Wildpeaks on those wheels and they look much better.

It always looks awful, stretched out and draws more attention to the tire. It would be fine with a 7" but goofy with 8"

If you plan on swapping the TPMS over the tires have to come off anyway.
