    St Louis cut ribs are just spare ribs that have been trimmed. Instead of paying the higher price to have someone else cut them, buy the cheaper ones and cut them yourself.

    The little skirt that you'll cut off is the chef's snack and is mighty delicious and is done smoking before the racks of ribs are.

    There are people who have bad things to say about pellet grills; that it is not authentic, it's an easy bake oven, etc... I don't care what they say because I have real wood smokers and grills so their opinions are just their opinions and don't affect me one bit. The point is, having other "real" smokers, I still use the pellet grill 90% of the time. I get enough smoke from it (I don't care for too much smoke) and it is easy and quick to get going. I have a Z-Grills and a Pit Boss. The Pit Boss has the added ability to open the plate and do real searing if you want to grill on it rather than smoke. I would say go for it!

    So you tell the Mrs, I don't know what happened I came out of the store from picking up a paint scraper and someone had loaded this into the truck and tied it down. I TRIED to do the right thing and tell em it's not mine but they said no this here says it is. WHO AM I TO ARGUE

    I flew home from my dad's funeral, got in absolutely exhausted and my wife said smokers are on sale at Costco... and the sale ends today. WHO WAS I TO ARGUE? :laugh:

    Granted, I had issues that ended up leading to me getting a second one for free...

    Mr. Fancy Pants with his new 4th Gen and a new Pit Boss Pro Series! Congrats, you're going to love it! I have the older 820 Pro and it's been amazing. I've been looking to upgrade to the newer version like yours so I'm interested to hear what you have to say about the techy bits and ease of cleaning.

    So putting it together and the initial startup was an absolute PITA. After figuring out the controls I got to do the 30 minute burn in time. Guess I need to grab some ribs or something easy to start off with.

    Putting it in smoke mode I felt like it gave off plenty, so we'll see :notsure:

    Smoke mode is gonna give off a ton of smoke.. but anything higher an you won't see much. Don't be alarmed.

    And any grill or smoker should be burned off regardless of style or brand.

    It will be a small learning curve.

    I set it to burn off while I hopped on my mower. Was occasionally checking on it as there was a good bit of smoke rolling from it. Thought I set it on 400, but left it on "S". Whoops :anonymous:

    I put the pellet grill beside my other one and the neighbor up the lane already commented :rofl:
