    After a little research, it seems that salt cured meats still need to be kept chilled. Above freezing but below 45 degrees. That doesn't do much for preserving my freezer full of meat.

    Well tbh the Rav4 can run off of sunshine or waterwheels too, at least for a while. Ebikes, cargo ebikes, etc. But your limiters at that point will be tubes and tires and other wear items.

    Again, can plug the freezer into the car's battery, plus I do have a couple hundred watts of camping solar and an inverter/battery pack that can keep up with the freezer.

    Yes you need a pressure canner for meats.
    “Well how am I going to use a pressure canner with no power?”
    It can be used a couple ways. A camp stove, a larger camp stove that’ll run off a gas grill bottle preferably, over hot coals perhaps a little harder to regulate temps, and maybe even over charcoal.


    the canned venison on the right was partially cooked and packed with beef broth.
    The “ugly chicken” is raw packed. You simply cut chunks and put them in the jar and can them you add nothing to them the juice comes from the chicken itself and is incredible broth.

    I’d deffinately vacuum seal it but still should be kept frozen until ready to eat then refrigerated after it’s opened

    Odd this recent talk of being self sufficient. We just had some tornados rip through the area. We were in the basement, makes you think, I need more stuff.

    Sadly Jim if a tornado hits your house you’ll most likely loose most of your peps. This is one of the reasons folks talk about splitting up their preps. Idk exactly how you do that I guess bury some or store some at a relatives you can get to easily

    I sometimes fill rawpack canned meat jars with V8 juice. Really makes bland pork loin taste good.

    And all of us that don't live in tornado zones are wondering why people aren't required to build earth bermed houses. And also how much our insurance rates are going to go up this year.

    Oh that does sound good. I haven’t tried pork yet. Best deal I’ve seen on that is the whole loins at Cosco. I have some frozen thinking about thawing and raw packing them

    The last time I did pork loin was during Hurricane Ian. My Inlaws lost power, and I canned most of the stuff that thawed in their chest freezer. They were going to throw it away.

    No joke I’d at least have an underground bunker or something. I’ve seen 4 tornados in the day time they were impressive even the small ones but at night that would be scary as hell

    Jerky? Not really. Literally how people preserved meat before the invention of refrigeration. Will it last forever? No... but assuming you're going straight to eating it, should last long enough until power is restored, or long enough that that it could be trade goods or gifts or whatever.

    Most new recipes don’t thoroughly dry the meat. Plus there’s a different kind of salt to use. I’m sure folks do it. I wanted to try curing myself but haven’t looked that hard into it yet

    Even if you use Prague powder (sodium nitrate) jerky won't last that long at room temp. It is not a long term preservation technique. People ate some janky stuff in the old days....
