    quick story:
    this past Xmas, my boss had some $$ friend who bought a bunch of jamon [off the bone] and wanted it sliced paper thin; dude brought it in and had us slice it on our slicer. he was cool and left us a big hunk - we also ate the fuck out of it while we were slicing it...

    the breed of pig used to make jamon are pata negra pigs
    at work we get Ossabaw pigs sometimes and they are direct descendants of the pata negra pigs that the Spanish dumped on Ossabaw Island [GA] back in the 1500s - their fat is also super silky but we can't cure them like the Spain and Portugal...they still taste good AF tho
