    Brothers, I need help. I've been experimenting on smoking spatchcock chicken. The meat always turns out perfect ( meater probe helps ) but the skin is always horrible.

    For this one I smoked at 225-250° till internal temp was 130° and then moved to the over at 420° till 160° and rested. The skin was like eating burnt leather with herbs on it.

    Cook it at a high temp the whole (shorter) time

    Leave it in the smoker at a higher temp the whole time? What temp do you do?

    I usually do mine at 350F and pull at 160F to let it rise to 165F while it rests for a bit. Others may have different ideas too

    Yep, render the fat in the skin without burning it. You can also do skinless chicken breast this way so it doesn’t turn into rubber

    Loosen the skin to get the rub under it. A bit of butter/bacon/evo will help with the rub as will a bit of lemon juice or balsamic. High heat will render the fat from the skin and get it crispy.

    My 2005 prerunner had frame failure Aug 2024
    I know it's the bbq smoking forum but this is where I hang out.
    Fuuuuuuck, my mechanic just informed me my 2005 Tacoma prerunner has frame failure. It's soft with his screwdriver going thru in spots.
    Gonna take to weld shop to see if they can save it. Doubtful.
    I ain't leaving here anyway lol
