I have read or heard that if you're not pulling much air through the condenser, you're not pulling enough 'thermal energy' (heat) out of the system, and your compressor head pressure will go way up.
In fact, I've seen a video where a gentleman installed a pressure switch on the high/hot side that activated an auxiliary electric fan that was installed in front of the condenser.
The hot smell may have been belt slippage??
Just spit balling here and 109 is pretty extraordinary.

Truck was overheating, when near the red the AC will kick off to remove thermal load.

Idling for 30 mins its REALLY bad above 100F

First clean the AC and radiator coils. Here is what I do every May before the summer heat hits. Remove the grill, spray Simple green, let it soak, rinse and repeat. You can also use a coil cleaner spray, but I have found that Simple Green works best because of its degressing ability to remove road grim and bug gunk.

I also added a push fan (on a switch) that will push more air across the AC & radiator when needed.

Not entirely sure what your symptoms point to but I had a car in the shop that had such weird A/c problems that we couldnt diag and it turned out to be a bad TXV "thermal expansion valve" and it fixed it immediately. could be a simple fix as that.
