    Today’s version of what we call “Turkey surprise”. Think American goulash. You use what you have or take your ass to the store for what you want.

    Ground turkey, onion, bell peppers, jalapeño, rotel, corn, zucchini, elbow noodles.

    This is probably a next go for me. I have a starter about 2.5 years old. I haven't done anything recently with it, but I could be convinced to give this a go. Always wanted to try english muffins. Will probably try with the instant yeast first just to figure it out. But this looks like a sustainable use for discard :D

    When we went to London we ate almost exclusively vegan (my wife is vegan). HOT. DAMN. They got some of the best vegan food out there. I had fish and chips a time or two, but otherwise I think the whole time in London I ate vegan. Save a Greg's sausage roll and a Scotch egg, just to have those things (and we got the vegan sausage roll to...that one...was a miss).

    BUT That's how I do my mash potatoes now myself. Stand mixer, whisk attachment, whipped dry and then add some of the water they were boiled in back into them. Keep whipping. Comes out fantastic - needs salt, and that's it.

    I think in the past year I've bought 2-3 gallons of milk, and maybe 2 dozen eggs. I use butter a normal amount, but otherwise, I don't do much for dairy. So finding that method for potatoes was a game changer. They come out great, no fats needed that I don't have in the house, and then would need to find a use for the remaining amount(s).






    But anyway, to be on topic, I ran the smoker a couple weeks back. Oxtails and sausages to fill the dead space. Definitely the best way I could have done the oxtails, but I wouldn't buy them again. I think they were on discount or something so I grabbed 'em to try it.

    It looks delicious! It’s definitely chili, not Texas red, but it’s still chili.

    I will never understand why so many fellow Texans don’t understand other versions of chili exist… and are good in their own right. One of my favorites is a southwest style with no tomatoes (but hatch chile substituted).

    We are in a temp apartment while trying to find a new house so I don't have my smoker. We wanted some BBQ so tried a place a lot of people here seem to like. $70 later my wife, my daughter and I all said not horrible but mine is better.

    Yeah.
    Yeah, last few times I got a steak at a restaurant (and we don't eat out often) I was very disappointed either in the quality of the meat, the way it was cooked, or both. So I never order steak and try to stick with whatever the special is or something that is hard to mess up.

    That old saying "Food is better when someone else makes it for you" - I 100% disagree with for BBQ same as you.
    I am not even that good at at, and right now only have a pellet pooper. Still, I think I can do better than anywhere in New England.
    A lot are good, don't get me wrong.

    I go out now for things that are a bear to make. Fish and chips - so much oil, and fish. Way worth it to just go out. Pastrami - not happening at home. I can, in theory. Pizza - Around here, we have the pick of the litter and it's cheap. A lot of stuff I'll go out for, but a lot of stuff too I just think "Why pay restaurant prices for that" OR "They can't do it good". Shepherds pie, tacos (we're in New England...), Cajun (We're in New England), pasta (I can make homemade without egg and it's delicious), etc.

    Funny, my wife just messaged me if we can go buy some steaks so I can grill them tonight (complex has some decent grills set up). I said SURE we can do that.

    Ya many things I would rather just take the time and so it myself. I think a lot of places try to cater to the masses with what they make so it kind of dumbs down the food. Where as we make it in a manner we know we will like. Funny everyone that comes to our place for a BBQ in the past is always asking when the next one is or when we have them over they ask if we are having whatever the meat is they love from our house.
