Trying that taco pulled pork tonight, a few degrees away from pulling it off, just pulled off the foil to try and get a little bark back

 

Absolutely phenomenal, favorite thing i’ve made in a long time.

 

Got a big feast going for my birthday weekend, but I am most excited to smoke this Taylor pork roll. It’s one of my favorite foods on the planet.

 

My 6 hr rib roast I smoked last weekend. Wife’s friend brought fresh rosemary she grows herself. I like to chop it up fine with thyme and minced garlic for a topping

PBBE done Asian style. Marinated in Bacchans miso sauce and a little orange juice, smoked til probe tender, finished in the tray with butter and Kinder’s teriyaki sauce. Made for some great rice bowls!

 

Gonna give the Pitboss another shot (despite my sorta hate for it). Got a shoulder ready for 5:30am tomorrow.

 

Been jonesin for a brisket so I cooked one!








Used a chunk of almond, a little mesquite a little red oak from the central coast. Not sure I tasted the red oak.

Grilled a top sirlion steak for the wife and I, medium rare by my standard...

 

While I hope that you enjoyed it, I’d call that ‘bloody as hell’.

 

Lol, everyone has their preference.
It is how we love our steaks. Juicy and flavorful.

 

Woke up a 4am and managed to not screw this up.

Tried something different with my steaks. Used the sear feature on the PB and it got a great crust, but I left it on a little too long so it wound up more medium rare, as opposed to the rare I like. Oh well, I'll know next time. Finding some use for the pellet grill/smoker as I've been making more fails then wins with it

We use berbere a bit, but never thought to do it on ribs.
Might have to give that a whack. Not many people know about it.
