    My 6 hr rib roast I smoked last weekend. Wife’s friend brought fresh rosemary she grows herself. I like to chop it up fine with thyme and minced garlic for a topping

    PBBE done Asian style. Marinated in Bacchans miso sauce and a little orange juice, smoked til probe tender, finished in the tray with butter and Kinder’s teriyaki sauce. Made for some great rice bowls!

    Used a chunk of almond, a little mesquite a little red oak from the central coast. Not sure I tasted the red oak.

    Shit, that looks perfect to me :101010:

    Tried something different with my steaks. Used the sear feature on the PB and it got a great crust, but I left it on a little too long so it wound up more medium rare, as opposed to the rare I like. Oh well, I'll know next time. Finding some use for the pellet grill/smoker as I've been making more fails then wins with it :laugh:
