Stock 2015 2.7L Tacoma with 235/75/15 on the factory 15x6 wheels. Wanting to get new wheels that are 15x8 and I want them to stick out just a little bit. Where does the offset have to be for that?

Your question is unanswerable without the offset of the 15x6 wheel.

Find the offset of the original wheel and then use an online wheel offset calculator and plug in all your data.

    The offset isn't a range. It's a specific value.

If you want poke, you just need to be less than factory... the more less the more poke.

+34mm is factory and 25mm is just shy of an inch so if you want 2" wider and all of it to the outside, you want to end up somewhere around -16mm. Just beware this does increase scrub radius so it will impact handling a little. 0 offset might be a better call.

So if I’m understanding correctly if I get wheels with a 0 offset then the tires will stick out about 3” further then they do now? I put it in the calculator but that didn’t make sense to me.

No. It depends on the offset of the current t wheel. We need that info to start.

So my stock wheels that are on the truck now are 15x6 with a 34mm offset. These that I’m looking at are a 15x8 with a 27mm offset. Should give me a little more poke and still fit correctly?

    Look at it this way:
If the new 8" wide rims were the same offset (34mm) as the 6" wide them you would have an additional 1" on each side.

You now will have an additional 7mm of "poke" (34mm - 27mm = 7mm). This gives you 32mm's (1 1/4") more total poke from old rims. 18mm (3/4") additional on the inside.

You’ll want to know the backspacing on the wheel, you don’t want it rubbing on your UCAs
How much room do you have now with your stock wheels/tires to your upper control arms
Also Toyota uses hub centric wheels you’ll want to check on that
