    I went by a grocery store yesterday and got some beef fat so we can grind the deer Cole killed this evening. Guy at the meat department said we got pork fat too. I said roger that.

    I've had deer meat ground with pork fat, I think it's okay in sausage but don't really like it in burger.

    I’ve always heard no to pork if you want a medium rare burger.

    also heard of people grinding in bacon which I want to try at some point.

    Bacon is pork....o_O but yeah pork is food safe to 145°

    I usually dont mix any fat in. The deer here arent gamey at all.

    I know a guy who makes summer sausage with deer meat and adds bacon to it. It's good. Bacon is too expensive though. :spending:

    Our deer have very little fat. It gets dry cooking it.

    I think i did have some added once in MD but usually dont add any. Unless its the summer sausage.

    Yea that’s just the only pork that I think may make it worth it.

    bacon is smoked atleast so I could say that makes me feel safer but not really.
