That mold you speak of is actually gold. I knew a guy once who travelled the world specializing in cheese cultures (Mold). Big bucks for the stuff from certain regions. Learned a lot from the guy.

Yeah cottage cheese is safe in my book. I'd say it's more like mini mozzarella balls and that sounds delicious.
