    Good morning. We had a wonderful time at the wine event yesterday. Sitting at our table was a former Navy Commander. He did 3 tours in Vietnam and was also in Desert Storm. Both he and his wife were a welcomed find at the event. I am not that familiar with Naval ranks, but I know he had an interesting career. Off to an early start this morning. The pork shoulder was on the smoker at 05:45. The game plan is to bring the internal temp up to 203 degrees then let it rest in an insulated box overnight. I will wrap the shoulder at 170 degrees then let it come up to temp wrapped up in butcher paper. Going to pull it tomorrow morning.

    Good morning all.
    Tom, that looks great...you mentioned you brine it overnight? Never tried that. I normally inject and apply a rub with mustard to make it sticky. Need to try that brine idea!
    This is my final day before giving two weeks' notice on the 30th, using up remaining vacation days. Not much work stuff expected today. Wash the truck and dentist visit later.

    Foggy morning here in the 727 currently 64* with a high expected of 74*.

    Technician coming today to remove the radio (signal input device) from the old satellite dish. I have to send it back. They're very particular about who handles it, how it's shipped, etc... must be expensive, IDK. Maybe I can talk him into removing the whole dish... probably not. IDC, I'll do it myself next summer sometime. It's just trash now. New hardwire connection is working great! Hello 20th century! NOW we're cookin'! :thumbsup:
    Kids coming in today for a visit and a free meal. Will be good to see them, life goes by in a blur.. we use these times together to catch up and watch each other getting old.. haha! So far, I'm winning! Happy holidays everyone.. keep on truckin'. :thumbsup:

Seems like the other day we welcomed our baby daughter into this world and now she is going to be 50 with 3 kids of her own youngest is 17 :facepalm:. Enjoy them all while you can.
