Happy Friday Jim . Be safe out clearing the snow...I used to enjoy firing up the snow blower and doing half the neighborhood (got me out of the house) but not so much anymore . I leave it to the younger folks.

We are having a few folks over for Christmas Eve dinner than Breakfast at my son and DIL's the dinner at the daughter and SIL's then home for a nap. Christmas for us isn't as hectic as it was in years past. Now we just go to where the meals are (less mess we have to clean up except Christmas Eve) enjoy the company, say good bye and come home.

I like Kosmos products, and the pork brine is excellent. A pork shoulder is so versatile and can be cooked in a lot of ways. I added an onion garlic, and 2 oranges to the soak to impart a little flavor into the meat. Sometimes I like to cook a pork shoulder with a Latin flair, so the brine is OJ with tomato sauce along with a citrus fruit, garlic and an onion. I usually braise the shoulder once it reaches 170 degrees if I am cooking the pork shoulder this way.

Good morning. I was up late last night and slept in till almost 7 this morning. The pork shoulder took 14 hours to get the temp up to 201 degrees then into an insulated box with the shoulder placed in a foil pan wrapped in old bath towels. This morning the shoulder was at 116 degrees. Going to the gym then pulling the shoulder when I get back home. Indie, our kitten, was on guard duty protecting the resting box. LOL Pic of the shoulder after 14 hours in the smoker.

We quit satellite long ago and had moved 1200 miles away by the time we were informed about the requirement to send back the part from the dish. But there was an old dish at the ranch we bought so we just took off the part from that dish and sent it in. If I remember right, they said it was $400 if we didn't return it. What a scam. I bet they throw the part away when they get it. Best case scenario, they might recycle something inside.

 

TODAY is the shortest day of the year!!! From this day forward we get more daylight every day until sometime in June. Whoop, Whoop!!!
