    Differently, Make more.

    After researching several recipes there were several common themes.
    Dry over night in the fridge by leaving it exposed.
    Rub in salt, pepper, fennel seeds.
    Wrap tight in foil leaving the fat cap exposed and cook low and slow (I did 3hrs at 280F).
    Hot oven to finish and crisp the skin (I did 45 minutes at 470F).

    What I would do differently. Jamie Oliver suggests cooking on a bed of onion halves. I was finding the bottom was getting too hot and drying and half way through I slid onion rounds under it to get it off the sheet pan and that worked. I'd do that from the beginning.

    The cut I had, and all that is available here, has the top layer of tough fat/skin trimmed off and only a thinner cap of white soft fat so I didn't get a thick layer of crackling. I'd need to shop around at large centers out of my little town.

    The sides were spot on and the gremolatta was perfect for countering the richness.

    Pretty happy with it

    I did a leg for Xmas last year, one of my favorites for leftovers was a Greek salad, lots of feta and oregano, everything a fine dice, no tomato, gold and/or red pepper, never green pepper and some orzo pasta. Fine dice cold lamb in it. Dressing of yogurt garlic lemon. Eat it with pita or on its own.

    First attempt at making ice cream with the new Ninja Creami.

    Vanilla peanut butter cup, 330 calories, 30 grams of protein and 9.5 grams of sugar for the entire container, which I won't eat all of at once.

    This should scratch the I want sugar itch without throwing me completely off the rails.

    I 90% swore off sugar. But I’ve had a craving. Pecan pie. I told myself, you want a piece, you have to make it. I suck w pie crust, but I think I’m close. Smells hood in the oven. Hehe.

    I ate a slice for breakfast. wow...I havent eating sugar in 4 months. that was an overload. delicious. but overload.

    I packed the rest up for my neighbors. back on the wagon. hahahha.
