Pecan pie is my kryptonite. My mom used to make it for my birthday every year.

 

How do you explain giving your neighbours a pie with one slice missing?

 

A neighbor made me an incredible cinnamon roll for Christmas and I could only take a few bites due to the sugar. Absolutely delicious, absolutely not for me

 

Someone knocks on my door with pie, I don't question these things.

 

Driving through town and they were giving these away at a community center. Finished product later!

 

Chicken pot pie

Chicken pot pie (30-45 min)

3c rotisserie chicken
3 c chicken broth
1c water
1 ranch seasoning packet
1 tsp salt
1.5 tsp pepper
Bring to a simmer (med/low heat)
Simmer until desired consistency (breading <Below> will dry remove a little moisture)

2c shredded cheddar cheese ( Cabot sharp 1 white, 1 yellow)
8 oz bacon pieces
8 oz cream cheese
Incorporate at medium heat
Dip into soup bowl (Stoneware soup mugs)

Cover with cheddar bay biscuit mix (mixed per pkg instructions)
Bake at 425 on pan for 15 ish min
Baste with included butter mix

 

only one way to get rid of ugly pie - eat it

trick for good pie crust is cold, everything cold, even put your bowl in the fridge for 1/2 hr before making.

Classic Pate Brisee (also 3:2:1 pastry)
By weight (ie 300grams flour, 200grams butter, 100grams water)
3 parts AP Flour
2 parts cold butter cut into small dice
1 part cold water

In a cold bowl, cut the butter into the flour adding small amounts of water at a time. -The goal is a mealie texture, you may not need all the water for the dough to come together in a ball

-Back in the fridge for 1/2 hr to keep the dough cold and the butter solid

-Roll out the dough on a floured work surface, slide the sheet of rolled dough onto a sheet pan and back into the fridge for 1/2 hour

-Lay the sheet of rolled dough into your pie plate and fill or blind bake (for blind baking, a sheet of parchment and some dry beans works well for weights, strips of foil around the edges prevent burning there.
