    Well, I'm in Rhode island. Our state us the size of most towns. We have i think 10ish libraries in the system. Some nice. Some janky but close so I'll take it.

    I'm set to try the pineapple upside down cake for Xmas desert. A couple of notes;

    1 - I'm using a plain white cake box mix, pineapple flavour can't be found here.

    2 - For whatever reason, tinned pineapple rings haven't been in our local stores for months (i buy for pineapple-Stilton burgers) so I'll use fresh pineapple.

    Last night's dinner was sliced cooked Italian sausage, sauteed mushrooms, caramelized onions in a cast iron skillet with your popover recipe mixed in (I usually make as I would yorkshire pudding). Worked well.

    Grandma @GarlicFarts pineapple upside down cake.

    Since I only had a white cake mix I subbed in 3T of pineapple juice for some of the water in the box recipe.

    I'm here with some more stuff I plan on making.
    I plan to make this cream cheese pie.

    I have never heard of dream whip, it SOUNDS like a dry version of cool whip that you then (with regret) make your own with. That being said, I am going to make this as is. Sounds like - it makes 2 cups of whipped topping, similar to cool whip. Which, I am going to try to make the cool whip version too.

    My notes are the redemption pie - that's ANOTHER family recipe from MY side, where it is topped with a jello layer instead of a canned pie filling layer. I laughed when I read this, because it is pretty close (that one calls for cool whip, which is why I went there).

    Right now my freezer is just jammed full, I have no space and no justification to make new stuff until I pick through that. After that, I'm going to start picking away at the apps and mains probably pretty quick. Desserts might take a while.

    Also, we made the whoopie pies over the holidays - turns out, there are multiple whoopie pie recipes floating around! I got one from my FIL's email she sent him back in 2001 (I think was the date). I'm going to have to pick one to put in there - which, I KNOW will cause some family drama :rofl:

    Also added buff chicken dip - not "grandma's" recipe - BUT it's become a family standard. I'm going to have to make notes about recipes I've added in that are not from her (which, I'm sure won't cause ANY family drama!) (This family is not dramatic, by the way).

    Looks like she substitutes 3/4C cocoa powder for the chocolate squares and maybe rolls back the oats to 2C (pencil).

    Chicken mozambique is a portuguese dish - a whole cuisine I hadn't really been exposed to until I moved down here. The amount of butter this calls for is NOT a typo.

    Ok we will make them either one day this week or this coming weekend.

    Ya I was looking to try and figure out what to do with the squares of chocolate as it doesn't look to be used. I'm guessing I will sift the cocoa powder into the dry ingredients in place of the mystical chocolate squares (not really sure what a square is ad many are different sizes and thicknesses now lol)

    Yeah, that one was one of the most chaotic recipes she had written down - so it was kind of funny that you asked for that one! For me, that's kind of a fun twist to this too is trying to decipher the notes.
