    I am working on my cooking skills, using an Instant Pot and various hunks of beef in the freezer.

    Last night's dinner was barley beef stew. I tossed in three pounds of beef to make sure I had leftovers. I also made a cup of rice (filler to put in the bowl, stew on top) and cornbread. I was stuffed and sleepy after that. I sent home one big portion with my son, and there were two more left over (one in the fridge for this week and another in the freezer for next week).

    The Instant Pot is interesting because things cook much faster, so a decent stew can be done in 40 minutes compared to six hours in the crockpot. Tossed in oil (just enough to coat the bottom), entire onion, garlic clover, locked lid. Saute for 5 minutes. Done. Tossed in three cans of beef broth, a little tomato paste, Worcestershire sauce, and seasonings (thyme, rosemary, parsley). About a cup of water. Didn't have any celery, but a lot of carrots, a cup of barley, and About 3 pounds of beef. (2 - 2" thick Ribeyes). Pressure cook high for 25 minutes. It's tasty stuff on a cold day. It's cooking with what I have, and there are no trips to the store.

    I've learned why my wife double-bagged meats. We'd buy a four-pack of ribeyes from Costco. One was plenty for the two of us. She'd use a freezer bag, then a second bag, tossing it into the freezer. I would "save plastic" and use one bag. A double bag is suitable for a year; my single bag shows freezer burn after three months. The freezer is full of those ribeyes. Instant Pot is great for those "slightly freezer-burned" meats, so they don't go to waste.

    Thankfully, my son liked it, but I was tempted to add some Tiger sauce to kick it up a notch.

    Stay warm out there. I have late-night boxing, but freezing rain and snow make it probably a good night to stay home.

    We love our Insta Pots. Got the small and medium and they are always in use.

    Strip the meat off Costo chickens and pressure cook the bones for real magic.

    Pressure cooker to kill lectins.

    The small one is a great rice cooker.

    My how things change...

    When I first got into the computer industry I remember working with 100MB disc packs which one would pull off of a rack, snap off a plastic bottom, screw the pack down into a drive bay, and then pull the plastic dust cover off. Once inserted you'd close the drawer or lid of the drive, spin the disc pack up (a process which required brushes to sweep the surface) and then launch the heads (a process where they would be inserted from the side of the drive into each of 20 platter surfaces, have the heads "crash" in the outer crash zone and then "fly" a few microns above the surface). The disc packs were thousands of dollars each and the drives were many tens of thousands.

    I told you the above to tell you this; the company I work for was just absorbed into a large Indian company (roughly 1,000 times our size), and my work laptop just had a huge amount of security related bloatware added to it. It kind of boggles the mind my laptop has more power and storage than the full acre of computers and storage devices I worked in back in the 1970s, only to have the bloatware slow my machine down to something akin to an old IBM PC XT. Annoying. I did some analysis and the bloatware is chewing up so much memory it leaves no room for the applications I need to run to do my work, so, I decided to follow the old adage, "I'd rather ask for forgiveness rather than beg for permission", and I ordered a 64GB memory module for my laptop for a whopping $110. Back in the 1970s, a single computer couldn't even address a fraction of that much memory, and even if it could, I expect that much "RAM" would have cost somewhere in the millions of dollars, if not tens of millions.

    Man it is bitterly cold here, this is the part of winter I don't like, sub freezing Temps in the single digits and below zero wind chills. I don't mind 20s and 30s but this kind of cold just chills ya to the bone! Low was 5 yesterday, 4 today, and there saying -6 for tomorrow morning. It's supposed to be more normal the end of the week and next week. Fingers crossed. My diesel semi at work I just leave running all nite long or it probably wouldn't start, the block heater is burned out on the 18 year old truck. 2 brand new trucks they park inside at night as they won't idle, stupid emission rule. New trucks can't idle because it can damage the emissions equipment. I'm glad this is my last winter in a semi!

    27°F. There is a little moisture around. Not enough for snow, I don't think. When the marine air pushes in, we will see.

    I played PB 6:30-10:45AM yesterday. I was not that sharp, TOO much coffee, if that is possible. Actually my legs are a little sore. That surprises me a little. They do call me "the teenager" (I mean YOUNGER people call me that). Tournament Saturday.

    Still NOTHING on dogo. Just leave it at that.

    Tom, you might want to invest in a vacuum sealer. I picked up a Nesco sealer back in July during the Amazon Prime day sale. Really made a difference on what I can buy at a lower price. Now with a Sous Vide machine I am experimenting with heating up precooked meals.

    If I can get 10 years out of a computer, I am happy. I usually purchase a decent machine that is expandable. My last PC was a Dell Inspiron the only thing I do not like is the single PCI slot. Wish it had 2 or 3 of them. Everything elce about the PC was expandable and fit into the PC case. My next Dell will be an XPS, the Inspiron line only goes up to 16 gb of ram now.

    Good morning. Up later than usual and off to the gym. Going to cook 2 chickens on the rotisserie, cut one in half and seal it up for future meals while my knee is mending. I feel pretty lucky that it is 8am and the outside temp is 13. Everyone stay warm.
