    I weigh it out on some digital scales, 2.5 oz’s for $5.00. That’s just an easy number to work with, and along the the same as the national brands, but way better IMO? Especially considering it’s 100% hand made with no preservatives. I don’t dry mine out to be like shoe leather, it has a nice soft/moist bite.

    Looks amazing! Just not certain I'd give up my back straps for jerky, but it has to be awesome. Just a quick note, if you want to truly ramp up the performance of that MasterBuilt electric smoker, look into a AMAZN smoke generator, game changer!

    Smoked Salmon and pork tenderloin tonight. Salmon came out great. No brine. Just salt and 16 mesh pepper. 250 degrees until 145 internal for both.

    Heads up. My walmart has a big display of sample size sauces. $0.50 each. Most are 2 oz. Kinder, Melinda's, Franks. Etc etc. Lots of flavors I wouldn't be willing to invest in a whole bottle without trying first.

    I grabbed a few when they were $1. Some were good, others will sit in the fridge for far too long until I look at the date, say to myself "has it really been that long?!?" and throw them away. :laugh:

    Smoked a pork butt and a brisket flat! My GF went to Costco and I asked for a brisket. The dork at Costco told her to get the flat only. Challenge accepted. To my surprise it came out extremely juicy and perfectly cooked. 15 hour smoke. I was expecting it to be dry.

    Smoked barbacoa tacos with fresh made salsa de aguacate (salsa verde with avocado).

    Beef cheeks can be a pain to trim, but I never regret it after the fact.
