I've always looked at the popcorn eating emoji as someone is interested in watching what they're seeing, want to see more, etc. What am I missing? lol.

It has a much more negative connotation than that. As if drama is unfolding.

Sure, in some situations but if you look back there was no drama that I saw brewing at all. They were simply interested in the posts.

I feel like this is what happens a lot on tw and just everywhere in general.

Sometimes people are just assholes but hopefully it's just a misunderstanding...
