Hello! When I accelerate, specifically between 1200-2000rpms, there is this ticking noise which almost sounds like something plastic. It gets significantly louder when going up hill. I went to Toyota and they said it could be coil knock so I replaced my spark plugs and coil packs but the noise still continues. If anybody could lend some help thank you!

Run some 91 octane in it.
    See if it stops.

When I first purchased the truck it made the rattle and on the way home I used some fuel additive and it seemed to stop, I'm assuming the additive works like 91, may I ask why this happens?

It's called spark knock. Typically your knock sensor(s) will retard the timing if they detect knock, but not always.
You're profile says you have a 5 lug, I'd assume it a 2.7 engine. Spark knock isn't really common on those trucks.
But sometimes, you get an engine that just doesn't like much timing.

If it stopped with an additive. You have 2 options.
    1. Run higher octane fuel.
    2. Get a tune suited to lower octane.

Are there other possible solutions? And if I do not do what you suggested would any possible damage occur to my engine? Thank you for the help!

Other than making sure the spark plugs are the correct ones, no.

@BassAckwards is the 2.7 guru around here.
Maybe he knows how to mitigate the knock. But the only ways I am aware of are timing and/or octane.

As for damage, probably not. Or at least not in the near future.
It does increase cylinder pressure, but the 2.7 is relatively low compression engine.
You don't exactly want it to knock, ideally you do your best to keep it from happening.

I never seen a 2.7 knock on a stock engine.
I sure there are some that do. But I haven't seen them.
I have more experience with the 3.4 and 4.0 engines myself.

Make sure the exhaust connection between the header collector and the entry of the midpipe (the one with cats) is tight and not leaking. Ive had an exhaust leak here before and it caused a rattling/marbles in the engine type sound while accelerating that sounded very similar to spark knock.
